SAGE & LEMON BUTTER BEANS

This light lunch or side dish has a perfect balance of lovely aromatic flavors and textures, and only takes a few minutes to prepare. I promise, that this nourishing and beautifully tasting dish, will leave you feeling very satisfied. A dish that ticks all the boxes for me.
Ingredients
1 can of butter beans, rinsed and drained
a good glug of extra virgin olive oil
1 brown onion, diced
3 cloves of garlic, roughly chopped
a large handful of fresh sage, stalks removed
juice of one lemon
sea salt
pepper
Method
Heat the olive oil in a large skillet over medium heat. Add the onion, garlic and sage, and cook while stirring, until browned and slightly crispy. Add the butter beans, and continue to cook for a minute or so. Add the lemon juice, and a good pinch of salt and pepper, and continue to cook for a further 2-3 minutes, just to let all the flavors sink in to each other. Remove from the heat and serve immediately. Add a little more seasoning, and an extra drizzle of olive oil if you would like.
Serves one as a light lunch, or two as a side.
