This is one of our original classic salads that is fresh, tasty and colourful! 4C stands for carrot, coriander, cashews and coconut which all blend well together!


Ingredients


MAKES 6 X 1 CUP SERVES
½ cup shredded coconut
1 cup raw cashew nuts
2 teaspoons
ground coriander
2 tablespoons oil
4 carrots
¼ cup lemon dressing (page 156)
3 tablespoons honey or date puree
1 tablespoon black sesame seeds
½ cup coriander (cilantro) freshly chopped


Method 


1. In a bowl combine coconut, cashews, ground coriander and oil and mix.

2. Pour onto an oven tray and bake at 150°C (300°F) for 10 minutes or until just brown (but not burned).
3. Grate carrots.
4. Combine all ingredients in a bowl and mix gently.

I have been following you and your show for many years. You can cook a meal very quickly and expertly. I have been a vegetarian since I was about 20 years old and raised our 6 children as vegetarian. I gave them raw goat milk after weaning. Only 1 cavity in the children their whole childhood. Cod liver oil. Many other things like raw carrot juice every day. For children, Adelle Ddavis Book, Lets Have Healthy Children. It has a good article about the faces of children as a product of diet. I.e. for bed wetting, s small magnesium tablet stops it! Your wife is lovely. I like your accent; I live in Arizona, U.S.A.

LEMON DRESSING - Makes 1 cup.

1/2 cup oil (I used coconut oil)
2 cloves garlic crushed.
1 teaspoon ground cumin
1 teaspoon salt.
1/2 cup lemon juice.

1) Place all ingredients in a large jar or jug and blend together with stick blender.
